This is a very basic white sauce that you can use for pizza, pasta and casseroles. Easy to make, it will keep well in the refrigerator for up to 7 days. It works well with chicken, shrimp, caramelized onions, basil, buffalo mozzarella cheese and countless other toppings. Be sure to use a good quality Parmesan and watch the heat closely so that the sauce doesn't burn. I like to use garlic paste, it eliminates any garlic pieces in the sauce.
- 2 tablespoons butter
- 3 tablespoons flour
- 1 cup milk
- 1⁄4 teaspoon salt
- 1⁄8 teaspoon pepper
- 1 garlic clove, minced
- 2 tablespoons fresh basil, minced
- 1⁄2 cup parmigiano-reggiano cheese, shredded
- Heat butter in a small saucepan. Slowly add flour and stir until thoroughly mixed.
- Slowly whisk in milk, adding gradually. Stir in remaining ingredients. The sauce will thicken upon standing.
